Ingredients
- Ground melon seeds (egusi)- 4 cups
- Palm oil- 1 cup
- Beef or goat meat- 2 lbs
- Stock fish- 1 medium piece
- Crayfish- 1/2 cup ground
- Spinach or bitterleaf- 4 cups chopped
- Seasoning cubes- 3 cubes
- Salt & pepper- to taste
- Onions- 1 medium
- Pepper (habanero or Scotch bonnet)- 1/2
Preparation
- Heat palm oil and fry ground egusi until slightly toasted.
- Add blended pepper mix and cook.
- Add meats, stockfish, and seasoning, cook until tender.
- Stir in vegetables and simmer for a few minutes.
